Apple Crumble with Crunchy Nut Mix


Ingredients
Serves 4

4 tbsp So Vegan So Fine white coconut spread
2 apples (Elstar, Jonagold, or Goudreinet)
4 tbsp agave syrup
4 tbsp oat flakes
20 g walnuts
2 tbsp sesame seeds
2 tbsp shredded coconut
2 tsp cinnamon




Instructions:

  1. Preheat the oven to 180°C (356°F).
  2. Thoroughly wash the apples and cut them in half. Carefully remove the cores with a spoon or a melon baller, creating a small cavity in each apple half.
  3. Mix the oat flakes, chopped walnuts, sesame seeds, shredded coconut, and agave syrup in a bowl.
  4. Fill each apple half with a tablespoon of So Vegan So Fine white coconut spread. Then, distribute the oat-nut mixture over the white coconut spread. Press the mixture slightly into the cavities of the apples. Drizzle some melted plant-based margarine over the apples for extra flavour and juiciness if desired.
  5. Place the stuffed apples on a baking sheet and bake in the oven for about 8-14 minutes, until the apples are soft and the filling is golden brown.
  6. Remove the apples from the oven and let them cool for a few minutes before serving.
  7. Serve the half-filled apples warm, optionally topped with a scoop of vanilla ice cream or a dollop of So Vegan So Fine walnut spread.

    Tip: Slice a small piece off the rounded side of each apple half to help them sit flat on the baking sheet.
